Fresh from the kitchen
Inspired by my ancestry I use the traditional baking methods and recipes from the United Empire Loyalists. With great pride I use my own home grown fruits and vegetables in my preserves and baking as much as possible. Everything made in my kitchen is done in small batches, this way I can ensure the quality of my products.
My heritage jams are made with fresh ingredients that preserve the true the flavors of the fruit. Special care is made as not to damage the semi-mashed fruit with a back to the basics technique using simple ingredients. Some of the re-occurring flavors in my recipes include raspberries, gooseberries, currents and pears that are used in the variety of jams, jellies and chutneys that I offer.
Made fresh before each market day, I bake pies, tarts, quiche, scones and cakes. The recipes are pure and include simple ingredients. There is no hiding the amount of fruit and filling in my pies as they are made deep dish style - full of fruit. The pie crust is mixed and rolled by hand to ensure a light flaky crust. Cakes and scones feature the fruit of the season such as rhubarb, berries, cranberries and apples.
